Today’s recipe is the ever simple crowd pleaser “Pumpkin Oatmeal Chocolate Chip Cookies.” Not only will a batch of these bring a smile to anyone you share them with, they’re also packed with Vitamin A! That’s right, pumpkin is a healthy source of mega vitamins your body needs and craves; including over 200% of your daily RDA of Vitamin A. Eggs are full of Selenium and B vitamins among many others and oatmeal is oh so rich in magnesium, iron and folate. Mix in a little chocolate, dried fruit and / or nuts, and you’re power packing healthy food in with those smiles! Talk about major babe points! :)

A quick tip to save money on dried fruit and nuts is to head to your local Sprouts. Their bulk bins are the perfect place to pay for only what you need when baking! They sell spices by the ounce as well!

Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients:

  • 1 stick melted butter

  • 1/2 cup brown sugar

  • 1 egg

  • 1/2 cup pumpkin puree

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1 heaping teaspoon cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1/4 teaspoon salt

  • 3/4 cup old-fashioned (rolled) oats

  • 1 cup of flour

  • 1 cup of pumpkin seeds

  • 1 cup dark chocolate chips

  • 1 cup dried cranberries


Instructions:

  1. Preheat your oven to 350 degrees F.

  2. In a large bowl, cream the butter & sugar.

  3. Add eggs, pumpkin & vanilla; creaming throughly.

  4. Stir in the cinnamon, pumpkin spice and salt.

  5. Add baking soda and flour; mix until combined.

  6. Add oats, chocolate chips, nuts and dried cranberries, stir until mixed.

  7. Spoon onto baking sheet and flatten them slightly.

  8. Bake for 15 minutes until they begin to brown.

  9. Cool and enjoy!
